IOFI Publishes its Flavor Glossary to Support Consistent Industry Terminology

Jun 15, 2026
The International Organization of the Flavor Industry (IOFI) is pleased to announce the publication of the IOFI Flavor Glossary, a new reference resource designed to support clarity, consistency, and alignment in the use of scientific, regulatory, and technical terminology across the global flavor industry.

Developed as part of IOFI’s commitment to transparent and science-based communication, the glossary brings together approximately 280 terms commonly used within the flavor sector. The resource is intended to facilitate a shared understanding among stakeholders and provide a reliable point of reference for industry professionals, regulators, researchers, and other interested audiences.

A Structured and Robust Methodology

The glossary was developed through a structured and iterative process combining internal and industry volunteers expertise. Key terms relevant to the flavor industry were identified, sourced, reviewed, refined, and harmonized to ensure consistency in terminology, tone, and structure.

A central principle guiding the development of the glossary was the application of a defined hierarchy of references. Priority was given to internationally recognized scientific and technical references, including standards and authoritative literature, followed by regulatory sources and recognized industry references. Wherever possible, food-relevant definitions were selected to ensure alignment with the specific context of the flavor sector.

Particular attention was given to ensuring that definitions remain clear, concise, and accessible while maintaining scientific and regulatory accuracy.

Supporting Consistent Communication

The glossary has been developed to support both internal alignment and external communication. By providing a common reference point for terminology, it aims to help improve consistency across scientific, regulatory, advocacy, and communication activities throughout the industry.

As terminology, regulations, and scientific understanding continue to evolve, the glossary is intended to remain a living resource that can be refined over time.
